I was wondering what ARAMARK did with the extra/leftover food? Does it go to a food bank or food rescue program?

 

Great question, Courtenay. We’re always working with our partner campuses to monitor leftover food to make sure we’re not wasting any to begin with. Our chefs take time to plan out menu portions to fit the amount of students coming to eat. If there are leftover ingredients, they’ll use them in a different menu later on so that it doesn’t go to waste. And now that UVA is trayless, the campus has seen 25% less food waste coming back at the end of a meal. Knowing that we can always keep working towards less waste, however, UVA has worked with several student groups to bring an organization called The Campus Kitchens to UVA. This will be a great way to put any leftover products to even greater use. Keep your eyes peeled for the program sometime this fall, and visit UVA’s dining website for ways to get involved with The Campus Kitchens project
